Hungerford Hill Hilltops Cabernet Sauvignon 2015
The Hilltops region is a warm growing region that Cabernet Sauvignon is particularly well suited to, tending to produce dark robust wines with distinct berry fruit signatures and firm tannin structures. We employ controlled modern winemaking techniques allowing us to control tannin extraction and emphasize fruit aromas and flavours. Maturation for 12 to15 months in mostly one to two year French oak barriques add oak tannins to the wine and help soften the fruit tannins.
Deep red in colour with a very dark centre. A potent aroma of varietal blackcurrant, black olive, clove and nutmeg provide layers of intrigue. The palate is very muscular whilst holding austere and noble tannins providing a long, balanced and integrated finish. Don’t be afraid to keep this wine in the cellar for up to 5 years and be rewarded with earthy cigar box aged cabernet characters that are well worth the wait.
